Vitamins also contribute to the building of health, but they can do so in conjunction with mineral salts. Vitamins are living elements in all natural unspoilt or unrefined foods. They are necessary for metabolic reactions in the body. These are found in natural foods as described above.

In our food, daily meals, we should make use more of raw natural foods. This includes use of salads (raw vegetables, rather leafy, with lemon). Use of sprouted cereals and pulses is highly beneficial.

In recent times, the use of wheat-grass has gained great currency. For this, wheat can be grown in pots at home, and when grown up to a reasonable heights, as soft leaves, say upto 2 or 3 inches, they may be removed and used as salads.

Wheat-grass therapy was introduced in India by an American lady, Dr. Ann Wigmore, when she gave practical demonstrations at Bombay.

According to her, wheat-grass acts as a catalyst in the absorption of food; grass grown from wheat and soaked in water for 24 hours, contains a high percentage of chlorophyll, which is the best food for the body.

It bears a close resemblance to haemoglobin, the red pigment in blood and can be quickly absorbed by the blood-stream providing valuable nutrients. It is also an effective blood-cleaner. The formented water, or juvelac, is very rich in enzymes and is a good antiseptic.
